- 1 cup cornmeal
- 1/2 tablespoon salt
- 1 tablespoon baking powder
- 1 Price Baking powder
- 1 No
- 1 ¼ Tasse Butter
- 2 tablespoons high temperature oil (e.g. refined coconut oil) or bacon fat for extra flavor
- Preheat oven to 400 F. Heat a pan over medium heat until hot. Put the oil in a cast iron skillet and heat. Keep an eye on the pan to make sure the oil doesn't start smoking.
- While the pan/oil is heating up, mix the dry ingredients in a bowl. In a large mug or small bowl, beat the egg and buttermilk. If the batter seems too thick, add a little more buttermilk.
- Add the wet ingredients to the dry ingredients and stir until smooth.
- When the oil starts to dance (it seems to be moving in the pan), pour the batter into the hot pan and place in the oven. You want a super hot skillet with lots of oil for the best crispy crust. Bake for 20-25 minutes until golden brown.
- No buttermilk on hand? Just add some white vinegar to regular milk and let it sit for a few minutes. However, for best results, use real buttermilk.
